Layered Raw Apple Pie

A pressed walnut and date crust frozen firm, filled with a spiced date, banana and apple puree layered with thinly sliced apple and golden raisins, and dusted with cinnamon. Nothing is baked.

Ingredients

Pie Crust

  • 1½ cup walnuts
  • 4 medjool dates, pitted
  • 2 tablespoon coconut oil, melted, cold-pressed extra virgin

Filling

  • 8 medjool dates, pitted, soaked 4 hours, drained, and rinsed
  • 1 banana, small, peeled and coarsely chopped
  • 1 apple, peeled, cored and coarsely chopped
  • 1 teaspoon ground cinnamon
  • ½ teaspoon nutmeg, ground
  • 1 teaspoon vanilla bean seeds, from 1 vanilla bean
  • ½ teaspoon sea salt

To Layer

  • 1½ tablespoon lemon juice, from 1/2 lemon
  • 5 apple, sweet and crisp, cored
  • ⅓ cup golden raisins
  • ½ teaspoon ground cinnamon, for dusting

Method

  1. Line an 8 x 2 1/2-inch round cake pan with nonstick parchment paper. Set aside.
  2. To make the pie crust, pulse the walnuts in a food processor for a few seconds, then add the dates and process again until you have a fine, sticky mixture. Add the coconut oil and blend again.
  3. Spoon the mixture into the prepared pan. Press down thoroughly and evenly, and put into the freezer to set for 1 1/2 to 2 hours.
  4. To make the filling, put the soaked dates, banana, and chopped apple into a clean food processor with the cinnamon, nutmeg, vanilla seeds, and salt. Pulse to thoroughly combine, then spoon into a mixing bowl.
  5. Stir the lemon juice into a bowl of cold water. Using a mandoline slicer or sharp knife, thinly slice the dessert apples, adding them to the water bowl as you work — the acid from the lemon stops them from turning brown.
  6. Spoon a thin layer of the filling onto the chilled pie crust and top with a few of the golden raisins and a layer of sliced apples. Push the apple slices down well. Repeat until you have used all the filling, sliced apples, and golden raisins, then dust the top of the pie with the cinnamon. Chill in the refrigerator for an hour before serving.

Notes

The dates soak 4 hours, the crust freezes 2 hours and the finished pie chills an hour. Firm dessert pears such as Bartlett work in place of the apples.
