Cauliflower Salad with Apple and Nuts

Raw cauliflower florets with chopped red apple, sunflower and sesame seeds and walnuts, over spiralized sweet potato and red onion, under a horseradish and dill coconut yogurt dressing.

Ingredients

Salad

  • cauliflower, divided into small florets
  • apple, large, red-skinned, cored and chopped
  • 2½ tablespoon sunflower seeds
  • 1¼ tablespoon sesame seeds
  • 3¾ tablespoon walnuts, chopped
  • sweet potato, large, peeled and spiralized
  • red onion, small, spiralized
  • 1¼ tablespoon canola oil, cold-pressed extra virgin
  • ⅝ teaspoon sea salt
  • ⅓ teaspoon black pepper
  • 2½ teaspoon fresh dill, chopped, to garnish

Dressing

  • 3¾ tablespoon coconut yogurt
  • 1⅞ tablespoon lemon juice, from about 3/4 lemon
  • 2½ teaspoon horseradish, grated, fresh
  • 1¼ tablespoon fresh dill, chopped
  • 1¼ clove garlic, crushed
  • ⅝ teaspoon sea salt
  • ⅝ teaspoon black pepper

Method

  1. Put the cauliflower florets into a large bowl. Add three-quarters of the apple, all of the seeds, and 2 tablespoons of the walnuts.
  2. Beat all the dressing ingredients together in a small bowl and pour it over the cauliflower mixture. Stir well until everything is coated.
  3. Divide the sweet potato spirals among five serving dishes and sprinkle the onion spirals on top. Drizzle with the canola oil, then add the salt and pepper.
  4. Spoon the cauliflower mixture into the serving dishes. Top with the remaining apple and walnuts, and garnish with the dill to serve.

Notes

The sweet potato is eaten raw, spiralized — no cooking anywhere in this.
