Pear, Banana, and Apple Breakfast Bowl
Chopped pear, apple and banana in a lightly spiced blended fruit puree, finished with cashews, sunflower seeds, golden raisins, goldenberries and dried cranberries. Nothing is cooked and it comes together in about ten minutes.
Ingredients
- 2 pears, ripe; Bartlett or similar
- 2 granny smith apple, green-skinned
- 1 banana, large, peeled and chopped
- ⅓ cup apple juice
- 1½ tablespoon lemon juice, from 1/2 lemon
- 2 tablespoon golden raisins
- 2 tablespoon cashews
- 1 tablespoon sunflower seeds
- 1 tablespoon raw sugar
- ½ teaspoon ground cinnamon
- 1 tablespoon goldenberries
- 1 tablespoon dried cranberries
Method
- Core and chop one pear and one apple. Put them into a serving bowl with half the banana and pour over half the apple juice and half the lemon juice. Stir well to combine.
- Core, peel, and coarsely chop the remaining pear and apple. Add them to a blender with the rest of the banana.
- Add the remaining apple juice and lemon juice to the blender with the golden raisins and nuts. Blend until you have a finely chopped mixture.
- Stir the blended mixture into the chopped fruit, along with the sunflower seeds, sugar, and cinnamon. Sprinkle with the goldenberries and cranberries. Chill in the refrigerator if you have time, or serve immediately.
Notes
