Acai and Berry Breakfast Jar
A layered breakfast jar of strawberries, raspberries and blueberries blended with homemade raw coconut yogurt, chia and acai, chilled overnight and topped with cashew butter, hemp seeds and mint. Includes the coconut yogurt recipe, which makes more than the jar needs.
Ingredients
Breakfast Jar
- ⅔ cup strawberries
- ¾ cup raspberries
- ¼ cup blueberries
- ⅔ cup coconut yogurt, see the coconut yogurt component
- ¼ cup coconut milk
- ½ teaspoon vanilla bean seeds, scraped from 1 vanilla bean
- 1 tablespoon chia seeds
- 2 teaspoon agave nectar
- 1 teaspoon acai powder
- ½ tablespoon lemon juice
- 2 tablespoon cashew butter
- 1 teaspoon hemp seeds
- 2 sprig fresh mint
Raw Coconut Yogurt
- 1 cup coconut meat, thawed if frozen, coarsely chopped; or the white meat of 1/2 fresh coconut
- ½ cup coconut water
- 1 probiotic powder capsule
Method
- Make the coconut yogurt. Blend the coconut meat and coconut water until smooth. Empty the powder from the probiotic capsule into the mixture and blend again for a few seconds.
- Pour the coconut mixture into a bowl, cover, and let stand overnight at warm room temperature. In the morning you should have about 1 1/4 cups of yogurt. Take what you need; the rest keeps in the refrigerator for up to a week.
- Blend 1/2 cup of the strawberries, 2/3 cup of the raspberries, and 3 tablespoons of the blueberries with the yogurt, coconut milk, vanilla seeds, chia seeds, agave nectar, acai powder, and lemon juice until smooth. Pour into a wide-necked jar of 10 to 12 ounce capacity. Cover and chill overnight.
- The following morning, top with the cashew butter and the remaining berries, followed by the hemp seeds and mint sprigs.
Notes
The coconut yogurt ferments overnight at room temperature, and the jar then chills overnight, so allow two evenings or make the yogurt in advance.
