Freezer Meal Stuffed Peppers
Bell peppers filled with a mix of uncooked quinoa, black beans, refried beans, enchilada sauce and cheese, then frozen and baked straight from the freezer. It comes out as a soft, saucy, one-pepper-per-person dinner with toppings added at the table.
Ingredients
Mix Filling
- 1 cup quinoa, uncooked, rinsed
- 1 can black beans, 14-ounce can, drained
- 1 can refried beans, 14-ounce can
- 1½ cup red enchilada sauce
- 1 tablespoon taco seasoning
- 1½ cup shredded cheese, shredded
Stuff Into
- 6–8 piece bell pepper, large, hollowed out, fresh
To Serve
- ½ cup extra shredded cheese, melted on top (optional)
Method
- BAKE: From frozen, bake at 400 degrees for 1 hour 15 minutes, covered.
- FINAL STEP: Finish by melting extra cheese on top. Serve with guac, sour cream, cilantro, hot sauce, etc.
