Freezer Meal Stuffed Peppers

Bell peppers filled with a mix of uncooked quinoa, black beans, refried beans, enchilada sauce and cheese, then frozen and baked straight from the freezer. It comes out as a soft, saucy, one-pepper-per-person dinner with toppings added at the table.

Ingredients

Mix Filling

  • 1 cup quinoa, uncooked, rinsed
  • 1 can black beans, 14-ounce can, drained
  • 1 can refried beans, 14-ounce can
  • 1½ cup red enchilada sauce
  • 1 tablespoon taco seasoning
  • 1½ cup shredded cheese, shredded

Stuff Into

  • 6–8 piece bell pepper, large, hollowed out, fresh

To Serve

  • ½ cup extra shredded cheese, melted on top (optional)

Method

  1. BAKE: From frozen, bake at 400 degrees for 1 hour 15 minutes, covered.
  2. FINAL STEP: Finish by melting extra cheese on top. Serve with guac, sour cream, cilantro, hot sauce, etc.

Notes

Freezer meal: assemble, freeze, and bake from frozen.
