Strawberry Pecan Lettuce Salad

A spring mix salad with red onion, feta and toasted pecans, dressed in a sweet-tart strawberry vinaigrette made from fruit spread, olive oil and red wine vinegar. Light and quick, good alongside a main or on its own for lunch.

Ingredients

Salad

  • 8 cup spring mix lettuce
  • ½ cup red onion, chopped
  • 2 tablespoon feta, crumbled
  • 2 tablespoon pecans, toasted

Dressing

  • ⅓ cup strawberry all-fruit spread
  • 4 tablespoon extra virgin olive oil
  • 2 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard

Method

  1. Place greens in bowl, add onion, feta, and pecans. Set aside.
  2. Whisk together remaining ingredients until well blended - drizzle over salad & toss.
