Cherry, Nectarine, Wheatberry Salad
A chewy wheatberry salad tossed with fresh nectarines, cherries, cilantro and sunflower seeds in a light lemon-vinegar dressing, finished with crumbled goat cheese. It holds up well chilled, so it works for lunches through the week.
Ingredients
- 1½ cup wheat berries
- 3¼ cup water
- 1½ teaspoon salt
- 1 cup nectarine, diced
- ½ cup cherries, quartered
- ¼ cup cilantro, chopped
- ¼ cup sunflower seeds
- 3 tablespoon olive oil
- 1 tablespoon white balsamic vinegar
- ¼ cup goat cheese
- 1 tablespoon lemon juice
- salt and pepper, to taste
- ½ cup dried cherries
Method
- Cook wheatberry w/ salt -> 35-45 mins until wheatberry are tender. Drain, set aside to cool.
- Mix together cooled wheatberry, nectarines, cherries, cilantro, goat cheese, sunflower seeds.
- Whisk together lemon jc, vinegar, oil.
- Combine dressing & wheat berry mixture, top w/ goat cheese.
